Muddy Buddy Popcorn

There are two snacks that I really enjoy. Popcorn and Muddy Buddies. So the thought came to me after I discovered that we were totally out of the cereal used to make Muddy Buddies… why not make it with popcorn?! Now we have the best of both!

This is a very simple recipe to make.

You will need the following items:

  • 8-9 cups air popped popcorn

  • 1 cup chocolate chips

  • 1 cup peanut butter

  • 1/2 cup butter

  • 1 Tablespoon vanilla extract

  • 2 cups powdered sugar

How to make:

  • Air pop about 1/2 cup popcorn kernels. This should get you to the 8-9 cups popped popcorn. Let it cool completely.

  • Place the chocolate chips, peanut butter, and butter into a microwave safe bowl and cook in the microwave for 60 seconds. Everything should be partly melted now. Add the vanilla extract and mix everything together until the mixture is smooth and melted.

  • Place the 8-9 cups of popcorn into a gallon size zip bag. Be sure to sort out all the un-popped kernels. Your teeth will thank you later. Now that the popcorn is in the zip bag, pour the chocolate / peanut butter mixture into the bag. Seal it and shake until all the kernels have been covered.

  • After your popcorn is completely covered with chocolatey goodness, pour the 2 cups of powdered sugar into the bag and continue shaking until all the kernels are again covered.

  • Pour into a large bowl and enjoy

  • Unsure how long this will last on shelf as we have never gone more than a day without eating the whole thing.
